SACRED HERBS -
MEDICINAL & EDIBLE GARDENS

There are many ways you can enhance your enjoyment of life  and improve your health, growing herbs and edible foods is an easy way to maintain your body's / families health.  Even if you  have limited or no garden space, there are numerous ways for you to grow even a few herbs, for instance in an old 1/2 cut barrel box, foam box, or in the traditional pot.  Apart from the edible benefits, growing your own herbs will definately put a smile on your face, whether admiring the flowers blooming, smelling the sweet scent or
grazing on the leaves as a quick nutricious snack.

HOW TO USE THE HERBS IN THE GARDEN
DURING THESE PRODUCTIVE MONTHS:

All herbs should be cut and collected first thing in the morning after the dew and before the sun’s light is strong and in dry weather. Preferably between new-full moon and before a hot day so the herbs dry quicker. To dry herbs, you can tie herbs in small bunches and hang upside down in a dark room or place on flyscreen or use a dehydrator. When crispy dry, place leaves in a clean jar, label, date and store away from sun.

BATH HERBS: Here is a list of herbs, use what you available.  Leaves and flowers of Basil, Comfrey, Dandelion, Geraniums (all), Lavender, Lemon Balm, Lemon Verbena, Mint family, Rosemary, Thyme, Angelica, Chammomile flowers, Lovage, Sage, Yarrow, Marigold flowers, Salad Burnet, Valerian, Nettles, Elderflowers, Herb Robert, Mugwort, Bay, Bergamot, Jasmine, Sandalwood. Caution: not for pregnant women.

Place herbs into a pot of boiling water turn off heat and let it sit for 15 minutes. Start the bath. Strain the liquid from the herbs pot into another pot. Pour this liquid into your bath and relax.

FOR YOUR HAIR:
(Make a new herbal infusion each time.)

ROSEMARY HAIR TONIC: Strengthens, tones, darkens and stimulates hair roots to grow.
Place a handful of rosemary leaves into a cup of boiling water, steep for 1 hour. Strain and use this rosemary water as the last hair rinse, (after shampoo, conditioner). Repeat this process 2-3 times weekly for 3-4 weeks. Do not use if pregnant.

CHAMMOMILE HAIR TONIC: Maintains blonde highlights, gentle hair rinse.
Place a handful of chammomile flowers into a cup of boiling water, steep for 1 hour. Strain and use this Chammomile water as the last hair rinse, (after shampoo, conditioner).

SAGE HAIR TONIC. Used to darken greying hairs. Place a handful of sage leaves into a cup of boiling water, steep for 1 hour. Strain and use this sage water as the last hair rinse, going straight onto the scalp. Repeat process 2-3 times weekly.

MARJORAM HAIR TONIC: Improves hair and helps the hair to stop falling out. Place a handful of marjoram leaves, flowers into a cup of boiling water, steep for 1 hour. Strain and rub this Marjoram water onto your scalp, can leave over night.

DANDRUFF: Cut up a handful each of Sage and Rosemary (top leaves). Place into a pot of boiling water, (500ml). Turn off heat, steep for 3 hours, then strain the herbs. Rob the tonic on your head 2-3 times a week to keep it free from dandruff.

CLOTHES RINSE:

LEMON BALM: Place as many leaves as you want into a pot of boiling water. Steep for 1 hour. Strain leaves and use the liquid as the last rinse on your clothes washing cycle. This will disinfect your clothes and give your clothes a fresh lemon scent.

Eucalyptus, Lavender and Rosemary can be used as well.

COMFREY FRITTERS:

10 medium sized comfrey leaves, 1 egg, ¾ cup plain flour, 1 cup full cream milk.
Make up the batter using 1 egg, flour and milk. Sift the flour into a bowl, make a well in the centre, add a pinch of salt. Break the egg into the flour well, add some milk and beat with a fork, gradually adding the rest of the milk and bring the dry flour into the centre. Beat well. Wash the Comfrey leaves, dip them into the batter before frying quickly in oil or butter, just until golden burn on each side. Can serve with cheese and meats.

MINT CHEESE:

Buy a 250ml of cream cheese. Grab a handful of Mint leaves, chop finely to make a big dessertspoon full. Place your cream cheese into a bowl, place chopped herbs on top and a pinch of salt and cayenne pepper. Mix until blended together creating a smooth texture not too crumbly. Then firm it into a small balls, wrap into greaseproof paper and store in a clean container. Use with cheese and meats.

HERBS TO USE AS SINGLE VINEGARS / OLIVE OILS:

Basil, Bay, Borage, Chervil, Lemon Balm, Fennel, Marjoram, Savoury, Rosemary, Thyme, Chammomile, Elderflowers, Lavender, Nasturtiums.

Locate a suitable clean glass container with a wide neck. Fill 500 ml of Olive Oil or Apple Cider Vinegar into a 750ml glass container, remember not to fill the container as the herbs will raise the liquid level. Loosely fill this jar of oil or vinegar with herb leaves. Seal the lid tight and store in a dark cool place for two weeks, shake daily. On the 14th day, strain and rebottle the liquid. Label and date. Use the Vinegars as a salad dressing. Use the oils for numerous food meals, for salads, as a tasty base to cook meats with. Depending on the herb or herbs you use, depends what food dishes you would like to accentuate.

HERB SEED VINEGAR: CORIANDER, FENNEL, DILL.

Bruise seeds in a pestle and mortar, using about 3 tablespoons of seeds (one each) to 1 litre of vinegar. Warm the vinegar and pour over the seeds in a large jar. Cover tightly and place in a warm dark place for about 2 weeks. Shake daily. On the 14th day, strain and rebottle the liquid. Label and date.
